TOMATO SOUR CREAM CASSEROLE | |
1 med. onion, chopped 2 tbsp. salad oil 1 (1 lb., 12 oz.) can tomatoes 1 pkg. Mexican style Sloppy Joe seasoning mix 1 (4 oz.) can green chilies, chopped 1 (5 1/2 oz.) pkg. nacho cheese flavor tortilla chips 3/4 lb. Monterey Jack cheese, grated 1 c. sour cream 1/2 c. grated Cheddar cheese Saute onion in oil, add tomatoes, seasoning mix and green chilies. Simmer, uncovered 10 to 15 minutes. In greased deep dish 2 quart casserole, layer ingredients in the following order: sauce, crushed tortilla chips, Monterey Jack cheese, sauce, Monterey Jack cheese, top with sour cream. Bake at 325 degrees for 30 minutes. Sprinkle with Cheddar cheese. Bake 10 minutes longer. Let stand 15 minutes before cutting into squares. Serves 6-8. |
