CUCUMBER MOLD 
2 pkgs. lemon gelatin
2 c. boiling water
2 tsp. plain gelatin
1/4 c. cold water
1 tsp. salt
2 tbsp. cider vinegar
2 tbsp. horseradish
2 tbsp. grated onion
2 med. cucumbers, grated with skins on (about 2 c.)
Little green food coloring

Combine lemon gelatin with boiling water. Let plain gelatin stand in cold water until thick, then add at once to the hot gelatin mixture. Add salt, green coloring and vinegar. Place in refrigerator until slightly congealed. Then fold in the onion, grated cucumber, and horseradish. Blend thoroughly. Pour into a medium sized well oiled mold. Let stand in refrigerator about 10 hours. Serves 8.
