SALMON FRITTERS 
Vegetable oil
1 c. (16 oz.) salmon, drained and flaked
1 c. buttermilk baking mix
1 egg
1/2 tsp. salt
1 tsp. dill weed
1 tbsp. lemon juice
2 tbsp. sliced green onion (with tops)
2 tbsp. finely chopped green pepper

1. Pour oil into a skillet or large saucepan to a depth of 2 or 3 inches. Heat to 365 degrees on deep fat frying thermometer.

2. Combine all ingredients in a large bowl. Drop by tablespoonful, a few at a time, into hot fat. Fry, turning once, until golden brown, about 2 minutes. Drain.
