PORK CHOP AND RICE CASSEROLE 
2 tbsp. shortening
3/4 c. raw rice
1/2 c. sliced onion
1/4 c. chopped green pepper
6 pork chops
1 sm. can tomato sauce
2 cans water
1 tsp. salt
1/4 tsp. black pepper
1/4 tsp. sugar

Melt shortening in frying pan. Brown rice, onion and green pepper; remove from pan. Brown pork chops well on both sides. Drain fat from pan. Add rice, onions, pepper on top and around chops in pan. Combine remaining ingredients and pour over ingredients in pan. Cover and cook for 1/2 hour at 350 degrees, reducing heat to 325 degrees for additional 1/2 hour. If rice becomes too dry, add small amount of water as needed.
