GOURMET HASHBROWNS 
2 eggs
1/2 sm. onion, diced
1/4 tsp. celery seed
1/4 c. bell pepper, diced
2 tbsp. flour
1 tsp. salt
3 drops Tabasco sauce
3 c. grated potatoes

Combine all ingredients except potatoes and blend together. Fold in potatoes. Pour batter on greased griddle in pancake-sized rounds. Fry until brown, turning once. Makes 4-6 servings. Not only is this good to add life to your breakfast, but it makes a good side dish with any meat.
