CINNAMON ZUCCHINI BREAD 
3 eggs
2 c. sugar
1 c. oil
2 c. grated zucchini
2 tsp. vanilla
3 c. flour
2 tsp. cinnamon
1 tsp. salt
1 tsp. baking soda
1/4 tsp. baking powder
1 c. coconut
1 c. chocolate chips (semi-sweet or milk chocolate)

Beat eggs until light and foamy. Add sugar, oil, zucchini and vanilla. Blend well. Sift together dry ingredients add to zucchini mixture. Stir in coconut and chocolate chips. Pour into 2 loaf pans. Bake at 350 degrees for 40 to 45 minutes or until done. Remove from pans and cool on rack. Wrap in foil.
