PEACH PRESERVES 
4 lb. peaches
2 tbsp. lemon juice
1 pkg. powdered pectin
7 c. sugar

Peel and pit the peaches. Cut in thin slices. Should be about 4 cups. Combine the peaches, lemon juice and pectin in a large pot. Stir in the sugar and bring the mixture to a full, rolling boil. Boil hard for about 1 minute, stirring constantly.

Remove from heat and skim off any foam that has risen to the surface. Pour the hot mixture into hot jars to within 1/4 inch of top, adjust the caps. Process 10 minutes in boiling water bath.
