PEACH ORANGE PRESERVES 
1 orange
4 c. frozen peaches, pureed
1/4 c. apple juice
1 tbsp. lemon juice
3/4 c. honey

Cut orange in quarters and remove seeds. Puree until rind is finely chopped. Combine orange puree, peaches, apple juice, and lemon juice in 8-quart stainless steel or enamel saucepan. Place over high heat, stirring frequently, until mixture comes to a boil. Add honey and continue stirring.

When mixture comes to a full boil, start timing for approximately 8-10 minutes. Jam is ready when it is thick like syrup. Pour into hot, scalded 1/2 pint jars, leaving 1/4 inch head space and seal. Process 10 minutes in boiling water bath. Yield 7-1/2 pints.
