POTATO SAUSAGE 
No more than 1/2 lb. beef casings
3 lbs. ground pork shoulder, have it ground twice
5 lbs. potatoes
Salt and pepper (generous)
1 lg. onion either grated or ground

Soak beef casings at least an hour, until soft, then wash salt out very thoroughly (place end of casing over water tap).

Grind potatoes raw. Add ground pork, grated onion, salt and pepper. Stuff into casings with horn, leaving at least an inch on each end to contract so the stuffing will not ooze out. Boil 1 to 1 1/2 hours (place in boiling water). Prick occasionally to keep casings from bursting.
