MEXICAN CASSEROLE 
1 lb. ground beef
1 env. taco seasoning
1 can stewed tomatoes
1 can cream of mushroom soup
2 c. pkg. Colby/Monterey Jack cheese
Noodles

Brown ground beef, season with salt and pepper. Add the taco seasoning, tomatoes, and soup. Let simmer.

Cook 3 to 4 cups noodles, rinse, drain and add to ground beef mixture. Add 1/2 the cheese and stir in. Put in casserole dish. Top with the rest of cheese and bake at 350 degrees until cheese is bubbly and slightly brown.
