OLD FASHIONED PRUNE CAKE | |
1 c. cooked, pitted, and chopped prunes 1 c. vegetable oil 1 tsp. vanilla 1 1/2 c. sugar 3 eggs 2 c. flour 1/2 tsp. salt 1 c. buttermilk 1 tsp. cinnamon 1 tsp. allspice 1 tsp. baking soda 1 c. nuts, chopped 1 tsp. nutmeg Cook prunes; pit and chop. Blend sugar and oil. Add eggs, one at a time. Add dry ingredients alternately with buttermilk. Add vanilla, nuts, and prunes. Pour into 9 x 13 inch well buttered baking dish. Bake at 300 degrees for 30 to 40 minutes. Ice with Buttermilk Icing while cake is warm. BUTTERMILK ICING: 1 c. sugar 1/2 c. buttermilk 1/2 tsp. baking soda 2 tbsp. white Karo syrup 1/4 c. butter 1/2 tsp. vanilla Mix all ingredients together, adding soda last. Boil slowly until it stops foaming and turns a little dark (7 to 12 minutes). Do not let icing thicken. Pour over warm prune cake slowly. |
