POTATO FILLING (Stuffing) 
6 c. cubed potatoes (3 lbs.)
2 eggs
1/4 c. milk
2 tbsp. butter
1 c. chopped celery
2 onions, chopped
2 c. bread cubes
1/2 c. chopped fresh parsley
1/4 tsp. black pepper
1 tsp. soy sauce
1 tsp. sage
1 tsp. thyme
1 tsp. savory

Boil potatoes; drain and mash with eggs and milk. Melt butter and saute celery, onion and bread cubes in butter until onion is translucent. Add sauteed mixture to mashed potatoes with parsley and seasonings. When thoroughly combined fill turkey cavity. Or the filling can be baked in an oiled dish, uncovered, 30 minutes at 350 degrees or until brown on top. Yields: 8 cups of filling or enough to stuff a 12 pound turkey.
