CORNED BEEF SALAD | |
1 sm. onion, grated 2 c. celery, chopped 1 c. green pepper, chopped 2 hard boiled eggs, chopped 1 can corned beef 1 c. mayonnaise 1/2 box frozen peas 3 oz. box lemon Jello 1 c. boiling water 1 tbsp. vinegar Salt and pepper to taste Put corned beef in strainer and pour hot water over to melt fat; shred with fork. Mix Jello with the boiling water and add frozen peas to Jello and stir. Mix all ingredients together, pour into 9x9 inch mold or pan and refrigerate. Yield: 9 servings. |
