FLORENTINE RICE 
1 (10 oz.) pkg. frozen chopped spinach, thawed
2 tsp. butter
1 med. onion, chopped
2 tsp. flour
Milk
1/4 tsp. celery salt
Grinding of black pepper
1 tsp. Worcestershire sauce
1 c. grated cheese (1/2 Mozzarella, 1/2 Romano)
1 1/2 c. cooked brown rice

Thaw spinach in microwave oven or steam in a covered pan with a small amount of water. Drain well, pressing out liquid into a cup measure. Set aside. Melt butter in a medium saucepan and saute onion until barely tender. Stir in flour. Combine spinach liquid with enough milk to make 3/4 cup. Pour slowly into flour mixture, stirring constantly until the sauce thickens. Stir in celery salt, pepper, Worcestershire, and cheese. Stir in rice and drained spinach. Turn into greased 1 to 1 1/2 quart baking dish and bake in preheated 350 degree oven, uncovered, for about 20 minutes. Makes 4 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
