WESTERN SUNSET SALAD 
1 (6 oz.) pkg. lemon gelatin
1 tsp. salt
3 c. boiling water
1 1/2 c. drained, crushed pineapple
2/3 c. lemon juice
2 c. coarsely grated raw carrots
2/3 c. dates

Dissolve gelatin and salt in boiling water. Add pineapple, juice from pineapple and lemon juice. Chill until thick. Fold in carrots and dates. Chill until firm.
