SUNSET YOGURT SALAD 
Shredded carrots and crushed pineapple add flavor to this two-layered mold, which contains over 50% of the U.S. RDA for Vitamin A.

2 pkg. (4 serving size ea.) or 1 pkg. (8 serving size) Jell-O Brand orange or lemon flavor sugar free gelatin
2 c. boiling water
1 container (8 oz.) plain lowfat yogurt
1/4 c. cold water
1 can (8 oz.) crushed pineapple in unsweetened juice, undrained
1 c. shredded carrots

Completely dissolve gelatin in boiling water. Measure 1 cup gelatin into medium mixing bowl; chill until slightly thickened. Stir in yogurt. Pour into medium serving bowl. Chill until set but not firm.

Add cold water to the remaining gelatin. Stir in pineapple and carrots. Chill until slightly thickened. Spoon over gelatin-yogurt mixture in bowl. Chill until firm, about 4 hours. Garnish if desired. Makes 5 cups or 10 servings.
