PINEAPPLE PIE 
1/2 c. flour
1 c. sugar
1/4 tsp. salt
1 c. pineapple juice
1/2 c. water
1 tbsp. butter
3 egg yolks, beaten
2 c. crushed pineapple

Mix flour, sugar and salt. Add pineapple juice and water. Bring to slow boil, stirring constantly. When thickened and boiling, cook over hot water for 15 minutes. Remove from fire. Add butter, pineapple and beaten eggs. Cool. Pour into baked pie shell. Top with meringue.

Meringue:

3 egg whites, beaten stiff
salt
1/3 c. sugar
1/3 tsp. cream of tartar

Beat together and top pie.

Bake at 350°F until meringue is brown.
