Beets
1 c. sugar
1 c. vinegar
1 c. water
Pinch of salt
1 tbsp. pickling spice

Cook beets, slip skins, cut if needed. Boil together sugar, vinegar, water and salt and spices. Add beets, simmer and seal hot.
