PICKLE BEETS 
beets
2 c. sugar
2 c. water
2 c. vinegar
2 tbsp. pickling spices

Wash; do not peel. Cook beets until tender and skin slips. Mix sugar, water, vinegar and pickling spices. Bring to a boil. Pour over packed beets. Process 30 minutes in hot water bath. Syrup for about 6 pints.
