PUMPKIN MUFFINS 
1 c. pumpkin
2 eggs
2 tsp. pumpkin pie spice
8 pkgs. sweetener
4 tbsp. raisins
1 tsp. vanilla
6 tbsp. self-rising flour
2/3 c. instant dry non-fat milk
1 tsp. cinnamon
1/2 c. grated carrots
1 tsp. baking soda

Combine dry ingredients. In a separate bowl, combine beaten eggs and vanilla. Add dry ingredients along with carrots and raisins. Spray muffin pans with Pam. Bake for 15 minutes at 350 degrees. Makes 12 muffins. 1 serving equals - 6 muffins - 1 bread, 1 protein, 1 milk, 1 fruit and 1/4 vegetable.
