PUMPKIN NUT CAKE 
3 eggs
2 c. pumpkin
3/4 c. vegetable oil
1/2 c. water
2 1/2 c. flour
2 1/4 c. sugar
1 1/2 tsp. baking soda
1 1/4 tsp. salt
3/4 tsp. nutmeg
3/4 tsp. cinnamon
1 c. raisins
1/2 c. chopped nuts

Preheat oven to 350 degrees. Beat eggs, pumpkin, vegetable oil and water; then add flour, sugar, baking soda, salt, nutmeg and cinnamon. Mix in by hand with large spoon, nuts and raisins. Pour batter into 2 buttered loaf pans. Bake for 1 1/2 hours. Then cool cake in pan, then turn over out of pan and frost.
