CREAMY BROCCOLI SOUP 
1 (10 oz.) pkg. frozen chopped broccoli, thawed & drained or 3 c. fresh broccoli, cooked
2 1/4 c. milk
1 tbsp. butter
1/4 c. instant mashed potatoes
2 tsp. minced onion
1 can (10 1/2 oz.) ready to serve chicken broth
1/4 tsp. salt
1/4 tsp. pepper

Cook broccoli; set aside. Combine milk and butter in a medium saucepan, cook over medium heat, stirring constantly until thoroughly heated (do not boil). Stir in potato flakes and onion.

Place in blender, add broccoli. Process 30 seconds, scrape down, process additional 30 seconds. Return to pan. Add broth and seasonings. Simmer until hot.
