SWEET POTATO SOUFFLE 
Bake the sweet potatoes.

3 c. mashed baked potatoes
3 eggs, separated
1/2 - 1 c. sugar
1 tsp. vanilla
1/4 tsp. nutmeg
1/4 - 1/2 c. melted butter
2 c. milk

TOPPING:

1/2 c. brown sugar
3 tbsp. melted butter
1/3 c. chopped nuts or coconut

Combine sweet potatoes with beaten egg yolks, sugar, vanilla, nutmeg, butter and milk. Beat egg whites until stiff. Carefully fold into sweet potato mixture. Pour in greased 2 quart baking dish. Combine topping ingredients, sprinkle over top. Bake in 350 degree oven for 30 minutes.
