RED BEANS AND RICE 
1 lb. dark kidney beans (red beans)
1 lb. Paul Prudomme's Cajun sausage
1 lg. onion
1 lg. bell pepper
1 tbsp. ground red pepper
2 tbsp. minced garlic
Salt and pepper to taste after cooking

Soak red beans in water overnight. Slice onion and bell pepper and cook in 1 tablespoon of cooking oil until soft and slightly brown. Cut sausage up into bite-size round pieces and cook until slightly brown (can be cooked with onion and bell pepper).

To cook red beans, water level should be slightly above red bean level. After sausage, onion and bell pepper are cooked, add to red beans along with garlic and ground red pepper and bring to a boil.

Lower fire to low/medium and cover. Cook for about 2 hours and stir frequently. Beans will be cooked when they are tender and can be easily smashed with cooking spoon.
