MINI QUICHES 
2 eggs
1 c. milk
Salt & pepper to taste
1/4 c. biscuit baking mix
1-2 c. chopped vegetables
1 c. chopped ham (or whatever you wish)
1 c. grated or cubed cheese of choice

1. Mix eggs, milk, salt and pepper and biscuit baking mix in medium bowl.

2. Add chopped veggies, ham and cheese.

3. Mix until all are covered with egg mixture.

4. Place into cupcake cups (the ones with foil outside) until about 1/2 full.

5. Bake at 400 degrees for 20 minutes or until set and brown on edges.

I'm a college student with a busy schedule, so I found that these freeze well and microwave quickly for a fast morning breakfast! Simple recipe was great on a student budget. I used sausage in place of the ham and used green onion, green pepper, and plum/roma tomatoes. Also, rather than foil cups, I used a little bit of crisco on the pan. Turned out to be yum!
