BANANA NUGGET COOKIES 
3/4 c. shortening
1 c. brown sugar
3 ripe bananas (blended smooth)
1 egg
1/2 tsp. salt
1 1/4 c. oatmeal
3/4 tsp. cinnamon
1 1/2 c. whole wheat flour
1/2 tsp. baking soda
1 c. carob chips (or chocolate chips)

Cream shortening and sugar until fluffy. Add mashed banana and egg. blend well. Sift together flour, cinnamon, salt and soda. Add to banana mixture, along with rolled oats. Stir in carob chips.

Drop from teaspoon onto greased baking sheet. Bake at 350 degrees for 12 to 15 minutes. Makes about 2 1/2 dozen cookies.
