PINEAPPLE REFRIGERATOR CAKE 
3 pkgs. lady fingers
11 oz. cream cheese
1/2 c. confectioners' sugar
1 can crushed pineapple
1/4 c. pineapple juice (taken from can of crushed pineapple)
1 pt. heavy cream, whipped
1 tsp. vanilla

Line the sides and bottom of a spring form pan (10 or 12 inch) with the ladyfingers round side down. Blend 1/4 cup pineapple juice with softened cream cheese and 1/2 cup confectioners' sugar. Add in the whipped cream flavored with vanilla. Pour 1/2 of mixture into lined pan. Cover with more lady fingers. Repeat. Garnish top with drained crushed pineapple. Chill well. Make an evening or day before serving.
