SWEET POTATO STUFFING 
3 c. chopped onion
2 c. chopped celery
4 c. mashed sweet potato
8 c. cubed whole wheat bread
2 tsp. dried thyme
1 1/2 tsp. dried marjoram
1/2 tsp. sage
1 tsp. pepper
1/2 c. rice or soy milk
2 egg whites, beaten

Saute onion and celery in small amount of water until onion is done. In a large bowl, mix 6 ingredients together well. Add onion and celery; mix well. In a separate bowl, mix milk and egg whites. Beat lightly and pour over rest of ingredients. Toss together. Stuff a 12 pound turkey or 3 chickens. If not for stuffing, bake in a non-stick casserole dish at 350 degrees for 30 to 35 minutes. Serves 8.
