PUMPKIN-RAISIN SQUARES 
1/3 c. raisins
1 c. plus 1/4 tsp. all-purpose flour, divided
2/3 c. firmly packed light brown sugar
1/2 c. cooked mashed pumpkin
1 egg
1 egg white
2 tbsp. vegetable oil
1 tsp. baking powder
1/2 tsp. ground cinnamon
1/2 tsp. ground allspice
1/4 tsp. salt
Vegetable cooking spray
1/2 tsp. powdered sugar

Toss raisins with 1/4 teaspoon flour, and set aside. Combine brown sugar and next 4 ingredients in a medium bowl; beat at medium speed of an electric mixer until well blended. Combine remaining cup flour, baking powder, and next 3 ingredients. Add to pumpkin mixture, and beat at low speed until smooth; stir in raisins.

Pour batter into an 8-inch square baking pan coated with cooking spray. Bake at 350 degrees for 25 minutes. Cool completely in pan on a wire rack; sprinkle with powdered sugar. Yield: 16 servings.
