GREEN CHILI RICE 
1/4 c. butter
4 c. cooked rice
1 c. cottage cheese
2 c. grated cheese
2 (4 oz.) cans chopped green chilies
1 c. chopped onion
2 c. sour cream
Salt & pepper
Optional: 3 c. chopped cooked meat (chicken, turkey, ham or beef)

Preheat oven to 375 degrees. Lightly grease 9 x 13 inch baking dish. In large skillet, saute onion in butter until golden, about 5 minutes. Remove from heat. Stir in hot rice, sour cream, cottage cheese, salt and pepper to taste; toss lightly to mix well. Layer half the rice mixture in baking dish, then 1 can chopped green chilies, all of the chopped meat (if used) and sprinkle with 1 cup grated cheese. Repeat layer. Bake uncovered 25 minutes or until hot and bubbly.
