2 sticks butter 1/2 tsp. baking powder 1 c. light brown sugar 1 1/2 lb. candied fruits, cut in thin slices (use more candied cherries and pineapple for color) 2 eggs 2 c. chopped pecans 1 1/4 c. plain flour Make batter by creaming butter and sugar together thoroughly; add eggs, one at a time, beating well after each. Fold in flour and baking powder, which has been sifted together. Spray 13 x 9 x 2 inch pan with Baker's Joy. Spread nuts evenly over the bottom of pan. Cover with batter. Sprinkle fruit over batter and press down firmly. Bake 50-60 minutes at 325 degrees. Let stand until cold. Cut into squares. Wrap squares in foil and they will keep indefinitely if stored in cool place. Yields 2 1/2 dozen. |
