SWEET POTATO CAKE 
1 1/2 c. oil
2 c. sugar
4 eggs, separated
4 tbsp. hot water
2 1/2 c. cake flour
3 tsp. baking powder
1/2 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
1 1/2 c. grated raw sweet potato
1 c. chopped nuts
1 tsp. vanilla

Combine oil, sugar and beat until smooth. Add egg yolks and beat well. Add water and then dry ingredients that have been sifted together. Stir in potato, nuts and vanilla and beat well. Beat egg whites until stiff and fold into mixture. Pour into 3 (8 inch) greased and floured cake pans. Bake at 350 degrees for 25 to 30 minutes.
