ENGLISH TOFFEE BARS | |
24 sqs. Saltines with unsalted tops 1 c. butter 1 c. packed light brown sugar 1/2 tsp. vanilla 1 (6 oz.) pkg. chocolate chips Preheat oven to 375 degrees. Grease 13 x 9 inch pan. Arrange Saltines right side up in single layer. Melt butter and sugar over medium heat. Bring to boil, boil 3 minutes stirring 1-2 times, remove from heat. Stir in vanilla. Pour over crackers, spread evenly. Bake 5 minutes (if crackers shift rearrange with fork). Cool in pan 10 minutes until top sets. Sprinkle with chocolate chips, let stand 5 minutes until chips become shiny and soft then spread evenly over top. Cool completely, cut in 2 x 1 inch bars. Store covered in refrigerator. Makes 54. |
