CHICKEN PATTIES 
6 c. chopped chicken
1 tbsp. chopped onion
1/4 cuppa buttah
1/3 cuppa flour
2 c. milk
2 tsp. salt
1/4 tsp. pepper

Cook hen til tender...whack up into pieces but hold on to the broth (never throw broth away...put eny thet's left over in the freezer 'r in the ice box.) Brown onion in buttah 'n stir in the flour, salt 'n pepper...pore in the milk 'n cook til kinda bubley like...then take off the stove. Now mix this wid the chicken in a shallow bowl...kiver wid sumph 'n put in the ice box all nite.

Fore you draps it in deep fat fur bout 3 minutes slap it into about 8 portions, shape 'em up 'n dip in beat up aigs...then roll in sum kinda crumbs. They'll do bettah if'n you'll chill the patties fur 15 minutes fore fryin.
