COCONUT BALLS 
1 lb. confectioners' sugar
1 lb. flaked coconut
3/4 c. warmed mashed potatoes
1 tsp. almond extract
12 oz. pkg. chocolate chips

Combine first 4 ingredients and mix well with a fork. Grease palms of hands lightly with butter and roll into small balls.

Melt chocolate chips in a double boiler. Dip coconut balls in chocolate to coat. Lay on cookie sheet to harden and dry. Keep refrigerated for storage.
