HIDDEN TREASURE CUPCAKES 
FILLING:

1 (8 oz.) pkg. cream cheese
1 egg + 1 egg yolk
1/2 c. sugar
Pinch of salt
1 (16 oz.) pkg. chocolate chips

Combine ingredients and set aside.

CAKE BATTER:

1 1/2 c. flour
1/4 c. cocoa
1/2 tsp. salt
1 egg white
1 c. sugar
3/4 tsp. baking soda
1/3 c. salad oil
1 tbsp. vinegar
Granulated sugar & chopped nuts

For batter, combine first 5 ingredients in a bowl. Combine remaining ingredients, adding all at once to dry ingredients; mix well. Fill 24 paper lined muffin cups 1/3 full of cake batter. Top each with heaping teaspoon of filling. Sprinkle with sugar and chopped nuts. Bake in a 350 degree oven for 30 to 35 minutes.
