1 c. sugar 1/2 c. butter 2 egg yolks 2/3 c. crushed pineapple (well drained) 1 c. chopped nuts 1/2 pt. whip cream Cream together sugar, butter and 2 egg yolks. Add the well drained crushed pineapple and nuts. Mix well then chill for 1/2 hour. Beat egg whites and fold into chilled mixture. Spread this between vanilla wafers, 3-4 wafers high. Beat 1/2 pint whip cream and frost each stack of filled wafers, roll in shredded coconut. Place red cherry on top. Put in refrigerator at least 2 or 3 hours before serving. "These are delicious and look real festive. These can be frozen." |
