SWEET - SOUR CHICKEN 
1 (2 1/2 to 3 lb.) broiler-fryer, cut up
1/2 bottle (8 oz.) Russian dressing, the dark red kind
1 env. onion soup mix
1/2 jar (10 oz. size) apricot or peach preserves
Water

Put chicken in shallow baking dish. Mix dressing, soup mix and preserves with small amount of water. Pour over chicken and bake in a 350 degree oven for 1 1/4 hours or until chicken is tender. Serve with rice. Makes 4 servings.
