CINNAMON SPICE CAKE 
3/4 c. plus 2 tbsp. cake flour
1 tsp. baking powder
1/2 tsp. cinnamon
1/2 tsp. ground nutmeg
1/3 tsp. ground cloves
1/3 c. butter, melted
1/3 c. sugar
1/4 c. skim milk
1 egg
1/2 tsp. vanilla extract
1 tbsp. powdered sugar

Spray an 8 inch square pan with vegetable cooking spray. Set aside. Combine cake flour, baking powder, cinnamon, nutmeg and cloves. Stir well and set aside. Melt butter and gradually add sugar, beating at medium speed with an electric mixer. Add flour mixture and beat well. Combine milk, egg and vanilla and add to creamed mixture. Beat at low speed of electric mixer until blended and continue to beat at high speed 2 minutes. Pour batter into greased pan and bake in a preheated 350 degree oven for 25 to 30 minutes or until wooden pick inserted in center comes out clean. Sift powdered sugar over cooled cake.
