FISH PIQUANT 
2 lbs. fish fillets (haddock, flounder or perch)
1/2 c. French dressing
2 tbsp. butter
1 sm. onion, chopped
1 lemon
Tarter sauce

Clean and season fish. Dip pieces into French dressing. Heat the butter. Add the fish. Place chopped onions on the fish. Cook 7 to 8 minutes over moderate heat, turning only once. Serve with lemon wedges and tarter sauce.
