STUFFED FLANK STEAK 
1 flank steak (1 1/4 - 1 1/2 lbs.)
1 env. Italian dressing mix (Good Seasons)
1 onion, minced
1/2 c. grated Parmesan cheese
2 tbsp. cooking oil
1/2 c. water
1/4 c. dry red wine or grape or apple juice
1 (8 oz.) can tomato sauce

Combine salad dressing mix, onion and cheese, and place on steak pressing firmly. Roll steak lengthwise to enclose filling and tie securely. Brown roll in hot oil. Pour off drippings. Add water, cover tightly and simmer 1 hour. Add wine and tomato sauce and simmer, covered 30 minutes or until tender. Slice and serve with small side of spaghetti.
