FRESH CRANBERRY BREAD 
2 c. flour
1/2-1 tsp. salt
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1 c. sugar
1 egg, slightly beaten
3 tbsp. oil
3/4 c. orange juice or juice of 1 orange & enough water to make 3/4 c.
1/2 c. nuts
1-2 c. cranberries cut into halves
Grated rind of orange

Turn oven to 350 degrees. Sift flour with dry ingredients; add beaten eggs, oil and orange juice. Combine only until dry ingredients are moistened. Fold in nuts, cranberries and orange rind.

Turn into greased loaf pan or 2 one half pound pans. Bake 1 pound pan 1 hour and 1/2 pound 45 minutes or until done. Wait 24 hours or longer to cut.
