SWEETLY CRISP CHICKEN SALAD (OR
TURKEY)
 
3 1/2 c. diced cooked chicken
1 c. sliced celery
1/2 (8 oz.) can water chestnuts, drained and sliced
1/2 c. chopped red onion
1/2 c. seedless red grapes
1/2 c. seedless green grapes
1/2 c. sour cream or yogurt (can use mayonnaise)
2 tbsp. half and half
2 tbsp. minced candied ginger
1 tbsp. toasted sesame seeds
1 1/2 tbsp. rice vinegar
1/2 tsp. sesame oil
Salt and pepper
1/2 (5 oz.) can chow mein noodles

Toss chicken, celery, water chestnuts, onion, grapes together in large mixing bowl. Set aside. Blend sour cream, mayonnaise, half and half together until smooth. Stir in ginger, sesame seeds, vinegar and oil and season to taste with salt and pepper. Pour over chicken mixture and blend well to coat.

Just before serving, add chow mein noodles. Toss to mix. NOTE: Mix each individual salad with noodles (they get soft if left in salad). Serves 6 to 8.
