COCONUT ICEBOX COOKIES 
4 c. all purpose flour
1 tsp. baking soda
1 tsp. salt
1 c. melted butter or other shortening
1 c. granulated sugar
1/2 c. sifted brown sugar, firmly packed
2 eggs
1 tsp. vanilla
2 c. coconut
1/2 c. sweet milk

Sift then measure flour. Sift again with baking powder, soda, and salt. Combine melted shortening, sugar, and brown sugar. add eggs and beat well. Add milk and coconut. Add flour.

Form into two rolls, wrap in waxed paper. Place in refrigerator until thoroughly chilled or cook as needed.

Cut 1/4 inch slices from roll and bake in oven at 425 degrees for 5-8 minutes. I have used pecans in place of coconut. Cinnamon may be added if desired. Also may be kept in freezer until ready to cook.
