CONGEALED VEGETABLE SALAD 
6 tbsp. sugar
1 tsp. salt
1 (6 oz.) pkg. lime flavored gelatin
3 1/4 c. boiling water
1/4 c. vinegar
2 c. shredded cabbage
1 c. shredded carrot
Lettuce
Cottage cheese
Spiced apple rings, optional
Parsley sprigs, optional

Combine sugar, salt and gelatin; add boiling water, stirring until gelatin dissolves. Stir in vinegar. Chill until partially set. Fold in cabbage and carrot. Spoon mixture into an 8 cup ring mold and chill until firm.

Unmold salad on lettuce leaves; fill center with cottage cheese. Garnish with apples rings and parsley sprigs if desired. Yield: 10 to 12 servings.
