ANISE COOKIES | |
2 eggs 1 c. sugar 1 1/4 c. sifted flour 1 tsp. anise extract 1/4 tsp. salt 1/2 tsp. baking powder Beat eggs until light and fluffy in a small bowl with electric mixer on high speed for about 10 minutes. Add sugar a little at a time, beating well after each addition (takes about 10 minutes more). Sift flour, baking powder and salt. Add flour mixture gradually to egg mixture, blending well after each addition. Stir in anise extract. Drop dough by teaspoonfuls on lightly greased cookie sheets, leaving 1 inch between cookies. Let dry uncovered at room temperature for several hours or overnight. Bake in moderate oven (325 degrees) for about 12 minutes or until firm. Cookies will be light in color. Remove from cookie sheets to rack and cool. |
