CANNED RED PEPPERS 
Clean peppers, cut into strips or chunks. Pour boiling water over to cover. Leave 10 minutes, then drain. Put cubes over to crisp up and cool peppers. Have sterilized jars and lids ready, need boiling water. Boil:

1 c. sugar
1 c. vinegar
1 c. water

Dissolve sugar by stirring. When peppers are cool pack in jars just dipped in boiling water. Pour boiling vinegar solution to 1/2 inch from top of jar and seal with lid. Flat lids will make popping noise as peppers cool. Check lids in 12 to 24 hours to be sure flats sealing well.
