APPLE CRUMBLE PIE 
1 (9 inch) pastry-lined pie pan

FILLING:

6 c. thinly sliced cooking apples
1/2 c. sugar
2 tbsp. flour
1 tsp. grated lemon peel
3 tbsp. lemon juice

TOPPING:

1/2 c. sugar
1/2 c. flour
1/4 tsp. ground ginger
1/2 tsp. cinnamon
1/8 tsp. mace
1/2 c. butter

To make filling, mix together sugar, flour and lemon peel. Sprinkle lemon juice over apples. Spread sugar mixture over apples and toss gently until apples are coated. Place in pie shell.

To make topping, mix together sugar, flour, ginger, cinnamon and mace. Add butter. Cut in until crumbly (medium fine). Sprinkle evenly over top of filling. Cover edge of pastry shell with foil. Bake in preheated oven (375 degrees) for 30 minutes. Remove foil and bake 30 minutes more, or until top is golden brown.
