4 c. sifted all-purpose flour 1 tsp. salt 1 egg 1 c. lukewarm water 1 lb. potatoes 3 tbsp. chopped onion 4 tbsp. melted butter 1/2 lb. farmers cheese or cottage cheese 3 tbsp. melted butter 1 c. sour cream Sift flour with salt. Stir in egg and knead well by hand, adding water until dough is smooth, flexible and does not stick to hands. Roll out dough to 1/8 inch thickness and cut out circles using 2 inch cookie cutter. To prepare filling, boil potatoes and mash. Saute onion in 4 tablespoons butter. Add to potatoes (onions and cheese). Place 1 tablespoon of potato to filling on each round of dough and fold over in half circles. Seal edges. Drop into boiling water and cook just until water begins to boil again. Remove at once with slotted spoon. Put in skillet with butter and onions, saute until golden. Serve with sour cream. |
