DOLLY'S BANANA LOAF BREAD | |
2 pkgs. active dry yeast 5 1/2 - 6 c. whole wheat flour 1 tsp. salt 2 1/2 c. hot water 3 tbsp. vegetable oil 1/2 c. honey 2-3 smashed bananas Mix yeast, 2 cups flour and salt in large mixing bowl. Pour in hot water, mix well. Add remaining ingredients; mix well, by hand. Add more flour while stirring until dough is stiff enough to knead. On lightly floured board, add only enough flour to keep dough from sticking. Knead 10-15 minutes. Place dough in lightly greased bowl. Cover loosely with a clean cloth and let rise until doubled, about 1 1/2 hours. Punch down, divide in two and place in well greased pan (9x5x3). Cover loosely and let rise again. After rising place in preheated 375 degree oven 45 minutes until brown then place aluminum foil over top for additional 20 minutes until loaves sound hollow when tapped. Remove from pan, cool on rack. Serve warm with sweet butter. |
